Okay, guys, before we get started, I want to talk about seasoning the meat. We're going to sear the meat, so I have salt and pepper.0:53 the outside, brought it to room temperature. Do that ahead of time so the salt can work on the meat, the flavors can get in, and then the other side is not seasoned. The moment you put this in the frying pan, put the seasoning side down and sear it. While the unseasoned side is up, okay, you're gonna hit it again with salt and pepper.01:21 then you'll flip after you're done searing on one side. All right guys, so I put some little bit of grease in the pan. You can use oil, you can use butter, okay, but you're basically gonna heat it up till it's all melted. And then you're gonna sear the meat.01:48 Okay, don't forget seasoning side down so you can season the other side. So now let's put the meat in. Take the seasoning side down.
